1. Cilantro-Mint Chutney

Indian Cilantro-Mint Chutney Recipe - Masala and Chai

Ingredients used: Fresh cilantro (1 cup), fresh mint leaves (1/2 cup), green chilies (2-3, adjust to taste), lemon juice (2 tablespoons), salt (to taste).

Procedure: In order to get the right consistency, add a little water as needed while blending all the components until they are smooth. To taste, adjust the salt and lemon juice.

Cooking time: 10 minutes

2. Tomato-Garlic Chutney

Ingredients: Ripe tomatoes (2 medium-sized), garlic cloves (4-5), vinegar (1 tablespoon), salt (to taste), sugar (optional, a pinch).

Procedure: In a nonstick pan, sauté chopped tomatoes and garlic until tender. After allowing it to cool, combine until smooth with vinegar, salt, and sugar (if using).

Cooking time: 15 minutes.

Procedure: Ginger, coconut, curry leaves, and green chilies are all dry-roasted until just beginning to brown. Allow it to cool before blending until smooth with water, salt, lemon juice, and asafoetida.

4. Apple- Cinnamon Chutney

Ingredients: Apples (2 medium-sized), cinnamon powder (1 teaspoon), nutmeg (a pinch), lemon juice (1 tablespoon), salt (to taste).

Procedure: Add a little water to diced apples and cook until tender. After allowing it to cool, blend until smooth with nutmeg, cinnamon powder, lemon juice, and salt.

Cooking time: 20 minutes.

5. Roasted Bell Pepper Chutney

Ingredients: Bell peppers (2-3, any colour), garlic cloves (2-3), balsamic vinegar (1 tablespoon), salt (to taste), black pepper (to taste).

Procedure: Bell peppers should be roasted until charred over an open flame or under a broiler. Remove the seeds and peel off the skin. Garlic, balsamic vinegar, salt, black pepper, and roasted peppers should all be blended until smooth.
