1. Broccoli Soup

200 g of broccoli, 1 cup spinach, Half cup of watermelon seeds (roasted), 1 cup of milk, 1 small onion, diced, 4-5 cloves of garlic, minced, 1 tbsp oil, Pepper

  • Put oil in a saucepan. Add the onion and garlic when the oil is hot.
  • Stir-fry till golden brown.
  • Simmer the broccoli and spinach for the next two minutes.
  • Add the toasted seeds to this, then cover with milk and cook for five minutes.
  • Use a hand blender to combine this mixture until it becomes creamy in consistency.
  • Serve this warm, finished dish with a dash of salt and pepper.

  • Place these nuts and vegetables in a blender.
  • Blend until a thick purée forms, about 3–4 minutes.
  • Pour one tablespoon of oil into a pot.
  • Add the coriander and black pepper.
  • Simmer it for an additional two minutes.
  • Garnish with pumpkin seeds and serve warm.
