Here’s a really simple and enjoyable recipe for green garlic shakshuka that you can make at home and share with your loved ones, courtesy of Master Indian Chef Sanjeev Kapoor:
Ingredients used
1 medium bunch of green garlic, 5 eggs, 1 small bunch of fresh coriander leaves, 10-15 fresh mint leaves, 1 medium onion, roughly chopped, 2-3 green chillies, 1 inch ginger, sliced, 2 tbsps oil, 1 tsp cumin seeds, 2 spring onion bulbs (finely chopped), ¼ tsp turmeric powder, Salt as per taste, 1 tsp coriander powder, ½ tsp cumin powder, ½ lemon, 2 tbsps chopped spring onion greens and for sprinkling, Red chilli flakes , Crushed black peppercorns, bread slices
Procedure
- With the greens, chop the green garlic and set it aside. Blend the coriander, mint, onion, green chilies, and ginger leaves into a fine paste using a blender.
- Next, heat some oil in a skillet, add the cumin seeds and spring onion bulbs, and sauté them together.
- Stir everything together after adding the fine paste and chopped green garlic.
- Mix together the cumin, coriander, and turmeric powders with one cup of water.
- Next, squeeze in the lemon juice, add the spring onion greens, and thoroughly stir.
- Make five indentations and crack an egg into each one.
- Cook with a cover on until the eggs are set.
- Garnish with red chili flakes, crushed black peppercorns, and spring onion leaves.
- Serve warm, accompanied with slices of toast.
